I'm want to start exercising...?

I want to start eating healthier and exercising to lose weight and tone up but my schedule is kind of weird. I work 3-12 hour nights from Mon-Fri and I commute an hour each way to and fro. My nights vary from Monday to Friday, meaning it could be a combination of the 3 in a row or like Mon. Tues, & Friday. Just wondering do I have to exercise every single day to get results, because sometimes I don't want to do anything after work. On my 3 in a row nights, I just have time to go home, shower, and sleep, then get back up and on the way to work again. And with going to the gym with my schedule, I could exercise on Monday, but not get to (unless I missed some sleep) again until Friday. Again, what would be the best exercise/workout regimen for me so I won't feel like I'm skipping out.
